Soy and Honey Chicken with Green Beans and Rice
Print RecipeIngredients
- 260g Diced Chicken Breast
- 1 Echalion Shallot
- 150g Basmati Rice
- 30g Honey
- 1 Garlic Clove
- 1 Chicken Stock Powder
- 150g Green Beans
- 25ml Soy Sauce
- 30g Tomato Puree
- 10g Cornflour
- 150ml Water for the Sauce
Instructions
Step 1: Cook the Rice
Bring a large saucepan of water to a boil with 0.25 tsp of salt. Once the water is boiling, add the rice and cook for 12 minutes. After the rice is cooked, drain it in a sieve.
Step 2: Prepare the Chicken
In the meantime, heat a generous amount of oil in a frying pan over medium-high heat. While the pan is heating, place the cornflour in a large bowl and season with salt and pepper. Add the chicken pieces to the bowl and toss until they’re fully coated in the cornflour.
IMPORTANT: Remember to wash your hands after handling raw chicken.
Once the oil is hot, add the chicken to the pan and stir-fry until it turns golden brown. This should take about 4-5 minutes.
Step 3: Prep the Vegetables
While the chicken is cooking, halve, peel, and thinly slice the shallot. Trim the green beans and chop them into thirds. Peel and grate the garlic (or use a garlic press).
Step 4: Simmer the Ingredients
Once the chicken is browned, add a drizzle of oil if needed, then add the shallot and cook with the chicken until it softens. This should take about 2-3 minutes. Stir in the garlic and tomato puree and cook for 1 minute. Pour in the required amount of water and add the chicken stock powder, honey, and soy sauce. Stir in the green beans and bring the mixture to a simmer. Cover the pan with a lid or some foil and let it simmer until the beans are cooked and the sauce has thickened. This should take about 5-6 minutes.
Step 5: Finish the Dish
Once the chicken and beans are cooked, taste the dish and add salt and pepper if needed.
IMPORTANT: The chicken is cooked when it’s no longer pink in the middle.
If you think it’s necessary, add a splash more water.
Step 6: Plate and Serve
Fluff up the cooked rice with a fork. Spoon it into bowls and top with the soy honey chicken. Enjoy your meal!
