Step 1: Prepare the Wedges
Start by preheating your oven to 200°C. Cut the potatoes into 2cm wide wedges without peeling them. Arrange the wedges on a large baking tray, drizzle with oil, and season with salt and pepper. Toss the wedges to ensure they’re well coated, then spread them out in a single layer. Roast these on the top shelf of your oven until they turn golden, which should take about 25-30 minutes. Remember to turn them halfway through the cooking time.
Step 2: Get Started on the Sauce
While the wedges are roasting, pour the specified amount of water into a large saucepan and place it over high heat. Add the BBQ sauce, cider vinegar, chipotle paste, and a pinch of salt and pepper. Stir everything together and bring the sauce to a boil.
Step 3: Cook the Chicken
Once the sauce starts boiling, reduce the heat to medium, add the chicken, and cover the pan with a lid. Let the chicken simmer until it’s cooked and tender, which should take about 15-20 minutes. Stir occasionally and lower the heat if necessary. The chicken is safe to eat when it’s no longer pink in the middle.
After it’s cooked, remove the pan from the heat and use a slotted spoon to transfer the chicken to a cutting board. Roughly chop the cooked chicken.
Step 4: Finalise the Prep
As everything else cooks, trim and thinly slice the spring onion. Trim the carrot and grate it coarsely (no need to peel). Grate the cheddar cheese. Drain and rinse the black beans in a colander, then take half of them and mash them roughly in a medium bowl. Once the chicken is cooked and removed from your pan, add the black beans (both the whole and mashed ones) and the grated carrot to the remaining liquid in the pan.
Step 5: Simmer Again!
Stir everything together in the pan, then bring the mixture to a vigorous boil on high heat until it reduces to a thick sauce, which should take about 4-5 minutes. Stir frequently to prevent it from burning. Stir in the chopped chicken and let it simmer for another 2 minutes, then remove the pan from the heat. Taste the mixture and add salt and pepper if needed.
Step 6: Bake and Serve
Once the wedges are ready, transfer them to an ovenproof dish. Spoon the chicken mixture over the wedges, then sprinkle the cheese on top. Bake this in the oven until the cheese turns golden and bubbly, about 5-6 minutes. After removing it from the oven, sprinkle the spring onion on top and serve. Enjoy your meal!
