Step 1: Roast the Potato Wedges
Start by preheating your oven to 200℃. Chop the potatoes into 2cm wide wedges, leaving the peel on for extra texture. Arrange the wedges on a large roasting tray, drizzle with oil, and season with salt and pepper. Toss the wedges to ensure they’re evenly coated, then spread them out in a single layer. Roast the wedges on the top shelf of your oven until they’re golden and crispy, which should take about 25-30 minutes. Remember to turn them halfway through cooking for even roasting.
Step 2: Prepare and Cook the Beef
While the wedges are roasting, prepare the vegetables. Halve the pepper, remove the core and seeds, and slice it into thin strips. Trim the carrot and coarsely grate it, leaving the peel on.
