- 450g Potatoes
- 2 Glazed Burger Buns
- 240g Beef Mince
- Mayonnaise
- 20g Rocket
- 1 Medium Tomato
- 10g Panko Breadcrumbs
- 25g Grated Hard Italian Style Cheese
- 10g Truffle Zest
- 20g Onion Marmalade
- 2 tbsp Water for the Breadcrumbs
- 1 tbsp Olive Oil for the Dressing
- ¼ tsp Salt
Instructions
Step 1: Prepare and Cook the Wedges
Preheat your oven to 200°C. Cut the potatoes into 2cm wide wedges (no need to peel). Place the wedges on a large baking tray, drizzle with oil, and season with salt and pepper. Toss to ensure all wedges are coated, then spread them out in a single layer.
TIP: If necessary, use two baking trays to avoid overcrowding.
Once the oven is hot, roast the wedges on the top shelf until they turn golden, about 25-35 minutes. Remember to turn them halfway through the cooking time.
Step 2: Make the Burgers
While the wedges are roasting, thinly slice the tomatoes and halve the burger buns. In a large bowl, combine the breadcrumbs and the specified amount of water. Add the beef mince to this mixture, season with the designated amount of salt for the burgers and pepper, and mix well with your hands. Roll the mince into even-sized balls, then shape into 1cm thick burgers (one per person).
